The larger portion — 69% of the jar — is Chios mastic *ypovrychio*, the iconic Greek “submarine” sweet flavoured with pure mastiha oil from Chios. The *ypovrychio* takes its name from the tradition of submerging a spoonful into a glass of cold water or milk, where it slowly dissolves into a fragrant, sweet, milky-white drink. It is one of the most distinctive and nostalgic sweet traditions in Greece, particularly associated with Chios and the Aegean islands.
